Lemon Chicken Pasta

Ingredients
  

  • 8 oz pasta
  • 2 chicken breasts
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lemon, zested and juiced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese, for serving
  • fresh parsley, for garnish

Instructions
 

  • Cook pasta according to package instructions; drain and set aside.
  • In a large skillet, heat heavy oil over medium heat. Season chicken with salt and pepper then add them to the skillet.
  • Cook the chicken for about 6-7 minutes on each side until cooked through. Remove chicken from skillet and slice.
  • In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  • Pour in chicken broth, lemon juice, and lemon zest. Bring to a simmer.
  • Stir in heavy cream and continue to simmer until thickened, about 3-5 minutes.
  • Add the cooked pasta and sliced chicken to the skillet, tossing to coat everything in the sauce.
  • Serve topped with Parmesan cheese and fresh parsley.
