PUMPKIN CINNAMON OATMEAL CRISP IS BURSTING WITH FALL FLAVORS OF PUMPKIN AND CINNAMON AND IS A FUN TWIST TO THE TRADITIONAL APPLE CRISP.
Pumpkin Crisp is the new apple.
Why do apples get all the fun? This Pumpkin Crisp will change your whole attitude about fall. I love it because it is easy to make and so delicious. Filled with cinnamon, pumpkin and a delicious oatmeal crisp, it never lasts long at our house.
It seems like fall consists of three flavors: cinnamon, pumpkin and apples. I’m actually surprised there isn’t something with all three. This is one that everyone will love! It is the perfect flavor of cake, pumpkin, cinnamon crisp that is heaven in every bite. It has a cake/cookie crust, pumpkin filling and oatmeal crisp on top.

Serve with whipped cream or ice cream.

Ingredients
- Crust:
- 1 box yellow cake mix (set aside 1 cup mix)
- 1/2 c butter melted
- 1 egg
- Pumpkin Filling:
- 1 (15 oz) can pumpkin puree
- 1 egg
- 2/3 c sugar
- 1 t vanilla
- 1/4 t salt
- 1 t cinnamon
- 1/4 t nutmeg
- Crisp Topping:
- 1 c reserved cake mix
- 1/2 c sugar
- 1 T cinnamon
- 3/4 c old-fashioned oats
- 1/2 c cold butter, cut into pieces
Instructions
- Crust:
- 1. Stir together cake mix (reserving 1 cup for topping), melted butter and egg until well combined.
- 2. Press mixture into the bottom of a 9x13 pan.
- Pumpkin Filling:
- 1. Whisk together pumpkin, egg, sugar, vanilla, salt and spices.
- 2. Spread filling over pressed crust.
- Crisp Topping:
- 1. Stir together reserved cake mix, sugar, cinnamon and old-fashioned oats.
- 2. Cut in cold butter with a fork or a pastry cutter until resembles coarse crumbs.
- 3. Sprinkle over filling and bake in a 325 oven for 35-40 minutes, or until topping is lightly browned.
Make is a new fall favorite.
I love making this dish in the fall because it is a different variation of our favorite fall flavors. Everyone is always surprised by the sweet mix of favorite flavors. This is a recipe everyone will be asking for!
I love serving it with ice cream but you could totally do it with a dollop of whipped cream too. This is one that we eat sometimes for breakfast because it is that good.
