Chicken Enchiladas wrapped in honey, lime, and chili verde. Say less. This recipe is a family favorite and is so easy!

I love making dinner, especially when I can create a theme dinner! Who doesn’t like Mexican food? My family goes wild for these chicken enchiladas, and who can blame them? Anytime a recipe calls for shredded chicken, I go straight to Costco and get a whole chicken, a $5 timesaver! I always shred it before refrigerating, if I’m not going to cook it right away.

Ingredients
- Chicken Marinade
- 1/2 cup honey
- 1/4 cup lime juice
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 1 1/2 pounds chicken cooked and shredded
- Sauce
- 2 10 ounce cans of green enchilada sauce
- 1 cup half and half
- flour tortillas
- colby jack cheese shredded
Instructions
- Marinade chicken. Stir together honey, lime juice, chili powder and garlic powder until combined. Add chicken and let sit in marinade for at least 30 minutes.
- Mix enchilada sauce with half and half.
- Spread roughly 3/4 c of the sauce in the bottom of a 9x13 baking dish.
- Fill flour tortillas with marinated chicken and shredded cheese, roll-up, then place side-by-side in baking dish.
- Pour remaining enchilada sauce over the top of the enchiladas and top with more cheese.
- Bake at 350 degrees for 25 to 30 minutes.
These enchiladas will instantly become a favorite, consequently because they taste good and are so simple to create. Just toss the chicken in a quick marinade. Mix the chili verde and half and half. Place chicken and cheese in an tortilla and roll. Cover with sauce and bake. Depending on how you cook your chicken, it can totally be done in an hour and that is waiting 30 min for your chicken to marinade.

My favorite part of this recipe are the sounds that come from my families mouths. Instant confirmation that the meal was acceptable in every way to their taste buds.
