When it’s cold and rainy outside, nothing is better than snuggling up in a bundle of warm blankets and having a nice warm bowl of soup.
The thing is, when I want soup I don’t just want it out of a can, I want a nice, homemade bowl. And of course I want it to be something I am familiar with.
It’s funny because every time I go to The OG (The Olive Garden) I only ever get their soup and salad. And of course my favorite soup of their is the Zuppa Toscana. The spiciness of the sausage, chunks of potatoes, and that kale which makes me feel like I am eating something healthy. Such an amazing combination that I felt needed to be made at home this rainy day here in Utah.
The best part of making this is that I was able to just throw everything into the crockpot, leave to work for the day, and come home to an amazing bowl of soup that is delicious and tastes just like the Olive Garden, but without the amazing people watching.

::warm homemade soup::
Ingredients
- 3 14 oz cans chicken broth
- 2 c. whipping cream
- Salt and Pepper to taste
- 1 small onion, diced and sautéed
- 4-5 c. kale, chopped
- 1 lb. mild Italian sausage, cooked
- 3-4 potatoes, scrubbed and cut into slices or small chunks (do not peel)
Instructions
- Put everything, except potatoes, in a large slow cooker: cook on high for 3-4 hours.
- You can form the sausage into small balls, fry, and pat with paper towels, or you can cook it like ground beef.
- Add potatoes the last 40-60 minutes of cooking time (if you add them too soon they’ll be mushy).
