Tomato Basil Soup is perfect with grilled cheese.
There is nothing better than a bowl full of warm tomato soup on a chilly day. This fresh tomato basil soup is my go to recipe when I am feeling under the weather. It is the best comfort food and always tastes great with grilled cheese sandwiches (especially when they are made with my homemade bread).
Ingredients
- 1 white onion
- 1 T butter
- 4 cups tomatoes
- 2 c. chicken broth (I use bullion & water)
- 1 t. basil
- 1/2 t. paprika
- 1/2 t. sugar
- 1 bay leaf
- 1/8 t. ground nutmeg
- 1/8 t. black pepper
- 1/8 t. cloves
- Parmesan cheese and fresh basil for garnish.
Instructions
- 1. Saute chopped onion that has been chopped in about 1 T. of butter until limp.
- 2. Add one quart of blended tomatoes.
- 3. Add remaining ingredients.
- 4. Simmer for 30 minutes covered.
- 5. Serve with chunks of cheese in bowls or with cream.
- 6. Top with fresh parmesan cheese and basil.
I especially love how quickly it comes together. The most time consuming part is sautéing the onions. Then you blend it all together and simmer. Don’t worry if you don’t have garden fresh tomatoes. It tastes just as good with canned tomatoes.
