Summer is coming and in our house that means it’s time for salads! Emily loves making a good salad and this is one of our favorites and it’s such a simple recipe! You can whip this salad up in ten minutes flat and unlike other salads, this one gets better with time. It is one that you can prepare ahead and store in the fridge until you are ready to serve.

Ingredients
- Main Salad
- 4 cups shredded cabbage
- 4 green onions sliced
- 2 cups chicken OPTIONAL, shredded or diced
- 1 package Chicken Ramen Noodles
- 1/2 cup slivered almonds or cashews
- 1/4 cup sunflower seeds
- Dressing
- 1/4 cup oil
- 1/4 cup vinegar
- 1/2 tsp salt
- 1 flavoring packet from the Ramen Noodles
- 2 tbsp sesame seeds
- 2 tbsp sugar
Instructions
- Prepare chicken, if using, and place in a bowl. Add shredded cabbage.
- Break noodles and place in a colander. Pour boiling water over the noodles to soften and add to the cabbage.
- Add onions and sesame seeds.
- Blend vinegar, oil, sugar, salt, and Ramen seasoning to make the dressing.
- Pour dressing over the cabbage and mix well.
- Refrigerate for several hours.
- Just before serving add nuts and sunflower seeds.
We love to add all sorts of nuts and seeds but you could literally add anything and it would taste delicious!
