Chia seeds are packed with more than I could ever imagine: more calcium than milk, more antioxidants than blueberries and more Omega-3 than Salmon. How do they pack so much in such a little seed? The texture of chia seeds takes a little getting used to, but they are a great protein-packed addition to many recipes because of their ability to thicken and gel, so why not make chia seed pudding.
Chia seed pudding is a simple and delicious way to easily get the benefits of chia seeds. It takes minutes to make and has enough protein and nutrients to be a quick, on-the-go breakfast option. I get it though, you’re thinking there is no way these things could be good. Jason is out of his mind! I mean, that’s a given, but seriously this is the yummiest, healthier treat I have ever made. You will be amazed when you try it yourself.
I love that it satisfies my sweet tooth. I am trying my hardest to stop taking in as much sugar, and thankfully this does just that. I love topping some chia seed pudding with fruit, cinnamon, chopped nuts, granola or all of the above.
Make a jar of chia seed pudding and decide for yourself what you think. You will be greatly surprised by how much you will like it. Not only that, but this is the easiest thing I have ever made in my life, which makes it that much better.
- 1 can coconut cream
- ½ cup chia seeds
- 1 tsp honey
- ½ tsp vanilla
- Put ingredients in mason jar.
- Close jar and shake well until all items are mixed evenly.
- Place in fridge over night (or at least 3-4 hours). Open and enjoy.
- Top with fresh fruit, cinnamon or chopped nuts.
- *If you feel the pudding is too thick, add some coconut milk.
