Fall is in full force and there is nothing better than throwing in a couple ingredients and making some delicious pumpkin chocolate chip cookies.
I love making cookies, but when it’s an easy recipe, suddenly that makes them taste so much better. I feel like when it’s a lot of work to make the cookies they aren’t as good and I just get over them. But if I have a simple, quick recipe that anyone can make I get excited and want to share it with everyone.
The great thing about this recipe is that it only takes three ingredients: pumpkin puree, one box of spice cake mix, and chocolate chips. I also tell myself that since there isn’t any oil, butter, or anything else, that these are healthy cookies. Ha ha ha ha…it’s fine to lie to yourself this time of year.

Simple Pumpkin Chocolate Chip Cookies
One can of pumpkin puree
1 Spice cake mix
1 c chocolate chips
Preheat your oven to 350 degrees. Put the cake mix into a mixing bowl and add pumpkin puree. Mix thoroughly. Add the chocolate chips and mix in (I used a whole bag which made the cookies darker, but you can use a cup and they’ll be great). Take spoonfuls of dough on place onto greased cookie sheet. Cook for 12-15 minutes, or until sides are golden. Let cool and enjoy.
