What would we do without Pinterest when it comes to finding new meals to prepare? Am I right? I just loving being able to jump on there, type in unhealthy recipes and see amazing pictures of all my favorite things. But what I really love is when I get on there, type in salad and get tons of different salad options that look amazing. The question for me is always,”but how good to they actually taste?” Well, this apple pecan poppy seed salad will not disappoint.
I personally love a salad that doesn’t take a lot of effort on my part. If I can just grab things out of my fridge, throw them in a bowl and if it tastes good then I am a happy camper. Really though, I find the craziest concoctions of ingredients that I wouldn’t think would taste that great but it turns out they are amazing. So I have decided to be more open minded and trying new things. I make my son try new things all the time, why can’t I do the same?
This salad will be perfect to take to the next family gathering or neighborhood get together you have before all the kids have to go back to school. The best part, you won’t have any leftover at the end of the night because it’s that good. Give it a try. Enjoy!
- 6 ounces baby spinach
- 1 cup pecans, coarsely chopped
- 2 Granny Smith Apples, chopped
- ½ cup crumbled Feta Cheese
- ¾ cup dried cranberries
- [b]Creamy Poppy seed Dressing:[/b]
- ⅓ cup mayonnaise
- ¼ cup 2% milk
- 3 Tablespoons Sugar
- 4 teaspoons cider vinegar
- 2 teaspoons poppyseeds
- In a large bowl, toss baby spinach, pecans, apples, feta cheese, and cranberries.
- In a small bowl, whisk together the mayonnaise, milk, sugar, cider vinegar, and poppyseeds. Pour over the salad and toss to coat.
- Serve salad immediately and garnish with more feta cheese if desired.
