What is it about summer time that makes watermelon taste so much better? I mean maybe it’s the fact that they are in season and you can pretty much buy them anywhere, but I swear I don’t feel like summer is officially in season without my fare share of watermelon.
While I was on Pinterest the other day I kept seeing recipes for summer salsas by taking fruit and mixing it with jalapeños. This made me think, what if I took some of my favorite summer fruits and added a little spice? How would that taste? What about watermelon pico?
Let me just tell you, you won’t be able to keep this stuff on the table for very long. This watermelon mango pineapple pico de gallo is so good you’ll be wanting it for every meal.
It’s something about the sweet and the salty that makes it taste so much better. Plus, you get the freshness of the fruits that really add some amazing flavors. Best part, this is the easiest thing I have ever made. The fact that all I have to do is add everything into a bowl at once is so simple even a child could do it.

- 2 1/2 cups diced seedless watermelon
- 1 cup diced mango
- 1 cup diced pineapple
- 1 jalapeño, seeded and chopped
- 1/4 cup diced white onion
- 2 Tbls chopped fresh cilantro leaves
- 1 lime, juiced
- 1/2 tsp salt, or more to taste
- In a large bowl, combine watermelon, mango, pineapple, jalapeño, onion, cilantro, lime juice and salt.
- Serve immediately
