The best part about summer is all the grilling that goes on: burgers, steaks, kabobs. What about grilled fruit? Always delicious because the grilling brings out so much more flavor. I have had grilled pineapple a billion times, but what about grilled watermelon and pineapple on a kabob?
I absolutely love watermelon and pineapple so to put them together and throw them on the grill, I knew that this was a match made in heaven; grilling heaven.
What’s even better about these kabobs is that you marinate them so they have even more flavor by soaking them in coconut milk. Are you kidding me right now? I mean, I didn’t say these were the healthiest thing ever, but they sure are yummy and simple.
So this weekend, when you are throwing the different meats on the grill why not toss some of these amazing watermelon and pineapple kabobs. They will be the perfect addition to your wonderful grilling weekend. Enjoy!
- Fresh pineapple
- Fresh watermelon
- Coconut milk
- Skewers
- Soak wooden skewers in water for 30 minutes and preheat grill to 400 degrees.
- Chop fresh pineapple and watermelon into chunks and slide on soaked skewers.
- Lather coconut milk on fruit kabobs. Let soak for at least 15 minutes.
- Grill 3 minutes on each side or to taste.
