Over the weekend it finally felt like fall was upon us. The weather was finally dropping, the leaves have been changing to vibrant colors and the air was crisp as ever. There is nothing I love more this time of year than to grab a huge down comforter, throw in a classic 80s movie and serve myself a bowl of hearty beef and vegetable stew.
The great thing about a good old fashion stew is that you can just throw everything in a crock pot, and 6-8 hours later you have a delicious meal to eat for the night. I also love it because I feel like I am eating something healthy since it is full of lean beef and vegetables. I mean, it’s probably healthier than most things I eat.
Another great thing about this stew is that it’s simple that you can throw everything in the crock pot in the morning, then get everything else done that you need to during the day. It’s so simple that even dad can do this. Plus, I love bundling them up in Tupperware so I have hearty meals for my lunches I take to work. I swear, this is going to be a meal that I am making on a regular basis because it’s so simple and tastes so good!
- 2 1/2 lbs beef cubes
- 8 med potatoes (peeled and quartered)
- 8 large carrots (cut into chunks)
- 2 bay leaves
- 1 pkg dried onion soup
- 1 can Cream of Mushroom soup
- 1 can Cream of Celery Soup
- 1 – 8oz can tomato sauce
- In a large crock pot, layer beef, potatoes and carrots.
- Sprinkle onion soup, bay leaves and cover soups and sauce.
- Cover and cook on low for 6-8 hours.
