I love a routine. It’s who I am! I love doing the same thing every day, for the most part. But the one thing that can throw my whole day off is if my morning routine gets ruined in any way. I have to get up at 4:30 am (alarm has to be Shoop by Salt n Peppa), change in to my gym clothes, drink my lemon water (17 Day Diet thing), go to the gym, and come home to make my favorite breakfast: a Keifer fruit smoothy and egg white omelet.
If any of that routine gets thrown out I can’t function for the rest of the day. Especially if I don’t get my breakfast in. Today I thought I would share with you one of my favorite, and easiest, omelet recipes that is not only delicious, be quick.
Us working dads don’t always think we have time to make a healthy breakfast that will fill us up and get us through the day, or at least until lunch. I swear to you, I LOVE food and feel like I am always starving, but when I eat this breakfast I make it to lunch no problem every day.
The best part about this omelet is that it falls in line with the 17 Day Diet. So not only is it delicious, but it is always healthy. Enjoy!

Simple 17 Day Diet Omelet
4 egg whites
1 Turkey Patty (I used Kirkland from Costco)
1/2 red pepper, chopped
1 c. spinach
1/4 c fresh parmesan
Olive oil
Fresh ground pepper
Turn stove to medium heat and heat up frying pan. Add olive oil to coat pan to keep eggs from sticking. Once heated, place turkey patty on pan and cook thoroughly. Add red pepper and spinach and cook until spinach is wilted. Add egg whites and ground pepper to taste. At this point you can cook them to your own preference, but when you are about to take them off the heat, add your parmesan and flip eggs over them to make a sandwich. Remove from heat, serve, and enjoy.
